Zucchini Taco Boats

Ingredients
 

  • 1 lb lean ground turkey
  • 1 chopped pepper (your choice)
  • 1/2 chopped onion
  • Flavor god taco seasoning to taste
  • grated manchego cheese to taste

Instructions

  • Preheat oven to 350 degrees.
    Wash zucchini, then slice in half and cut into 6 inch boats. Scoop out the center to create the boats. Spritz lightly with olive oil spray then sprinkle with taco seasoning to taste.
    Brown the ground turkey with onion and pepper cooking until meat is well done. Add taco seasoning to taste. Fill the boats with the meat mixture and bake at 350 for 45 minutes until the zucchini is tender. Add grated manchego cheese and bake an additional 5 minutes until cheese is melted.
