Zucchini Skins

Ingredients
- 8 cups zucchini about 4 large
- olive or coconut oil cooking spray
- salt and pepper, to taste
Instructions
- Preheat oven to 400°F.
- Cut zucchini in half lengthwise. With a large metal spoon, scoop out the seeds.
- Transfer zucchini to a large baking sheet, spritz with cooking spray and sprinkle with salt and pepper.
- Bake until slightly tender, about 5 minutes.
- Add desired toppings (see ideas in recipe notes) and bake an additional 10 minutes.
Notes
1 serving = 2 oz protein, 2 cups vegetable Pizza Zucchini Skins:
- 1/2 cup Marinara Sauce
- 1/2 cup Italian Sausage
- 1/2 cup cottage cheese
- 1 tsp Italian seasoning
- 1 cup Buffalo Chicken Dip
- 2 Tbsp green onion, sliced
- 1 cup Linda's SHAPE Chili
- 1/4 cup Greek yogurt
- 2 Tbsp green onion, sliced
