Preheat oven to 400°F.
Cut zucchini in half lengthwise. With a large metal spoon, scoop out the seeds.
Transfer zucchini to a large baking sheet, spritz with cooking spray and sprinkle with salt and pepper.
Bake until slightly tender, about 5 minutes.
Add desired toppings (see ideas in recipe notes) and bake an additional 10 minutes.
