Zucchini Skins

  • 8 cups zucchini about 4 large
  • olive or coconut oil cooking spray
  • salt and pepper, to taste


  • Preheat oven to 400°F.
  • Cut zucchini in half lengthwise. With a large metal spoon, scoop out the seeds.
  • Transfer zucchini to a large baking sheet, spritz with cooking spray and sprinkle with salt and pepper.
  • Bake until slightly tender, about 5 minutes.
  • Add desired toppings (see ideas in recipe notes) and bake an additional 10 minutes.


1 serving = 2 oz protein, 2 cups vegetable
