Ingredients
- 2 eggs
- 2 Tbsp cottage cheese
- 2 Tbsp Greek yogurt
- 1 tsp pure vanilla extract
- 1 tsp lemon juice
- 2 tsp flaxseed, ground
- 1 Tbsp Xylitol
- 10 drops SweetLeaf Stevia Hazelnut
- 1/4 tsp ground nutmeg
- coconut oil cooking spray
Instructions
- Preheat oven to 350°F.
- In a blender, combine eggs, cottage cheese, yogurt, vanilla, lemon juice, flaxseed xylitol, and stevia.
- Blend until smooth.
- Spritz an oven-safe dish with cooking spray, pour in egg mixture and sprinkle with nutmeg.
- Bake 30 minutes or until toothpick comes out clean.
- Serve warm or chilled.
