Strawberry Cheesecake

Ingredients
 

Crust

  • 1 box pecan nut thins
  • 1 large egg
  • 1/4 unsweetened applesauce
  • 1 Tsp cinnamon

Filling

  • 2 1/3 cup lowfat cottage cheese
  • 1 cup greek yogurt
  • 2 large eggs
  • 1 Tbsp stevia powder
  • 1 Tbsp ground flaxseed
  • 1 Tbsp arrowroot flour
  • ½ Tbsp vanilla extract

Strawberry Jam

  • 1 pint Strawberries sliced
  • 1/2 Tablespoon lemon juice
  • 3 tablespoons water
  • 1 teaspoon stevia

Instructions

  • Preheat oven to 350 degrees Fahrenheit

Crust

  • In a food processor (or with a rolling pin and a ziploc bag) turn the crackers into crumbs
  • Mix cinnamon into crumbs
  • Mix beaten egg and applesauce with crackers
  • Line an 8-x8 baking dish with parchment paper
  • Press crust into bottom of pan in an even layer

Filling

  • In a blender, blend all ingredients except eggs until smooth
  • In a small bowl, beat 2 eggs together
  • Gently mix eggs in until just combined
  • Pour into crust, bake for 60 minutes or until set
  • Turn oven off and crack oven door about an inch, let it cool to about room temperature in the oven
  • Chill for 60 minutes or longer

Strawberry Jam

  • Cooked down over medium heat for 20 minutes, cool down before serving

Topping

  • Add cooled Strawberry Jam and Greek yogurt
