Sausage Quiche

Ingredients
 

Crust

  • 2 cups riced cauliflower
  • 1 tsp Celtic sea salt
  • 1/2 tsp black pepper
  • 1 spritz olive oil cooking spray

Filling

  • 1 cup chopped pepper of your choice
  • 1/2 cup chopped onion
  • 1 cup chopped spinach
  • 1/2 cup water - use to saute pepper, onion & spinach
  • 1 cup Turkey sausage - recipe to follow

Turkey Sausage Recipe

  • 1 lb ground lean turkey
  • 1/2 tsp minced garlic
  • 1/2 tsp black pepper
  • 1 tsp Celtic sea salt
  • 1/2 tsp ground sage
  • 1/2 tsp thyme
  • 1/4 tsp red pepper flakes

Final Ingredient

  • 5 eggs
  • salt & pepper to taste

Instructions

  • Preheat oven to 350 degrees.
    Crust:
    In the microwave, cook the riced cauliflower for 4 minutes and squeeze out all the water using cheesecloth. Then, add the eggs, salt and pepper and stir to combine. Spritz a glass pie plate with cooking spray and press into the pie plate. Bake for 15 minutes.
    Filling:
    In a small pan with water, saute' the peppers, onions and spinach. When onions are translucent, spoon into the cauliflower crust. Add the breakfast sausage over the pepper mixture.
    Whisk together the eggs, salt and pepper and pour over the peppers and sausage. Bake 30-40 minutes or until eggs are set.
