Combine wet ingredients and add combined dry ingredients. Microwave in cup (you can use the Pyrex to get English muffin shape-then slice it sideways and toast for tuna salad or egg salad or a sandwich) for 3 minutes. You can also bake in oven in cupcake tin for 10-15 minutes at 350F.
Spices: if making English muffins add some minced onion and garlic. If making a sweeter muffin add 1 T vanilla and 3/4 cup xylitol. You can also add (one cup per muffin) shredded zucchini to make zucchini muffins.
