Lemon Shrimp and Spinach

Ingredients
 

  • 4 oz shrimp peeled and deveined
  • 2 cloves garlic minced
  • juice of 1 lemon
  • 3 Tbsp water
  • 4 cups spinach
  • salt and pepper to taste

Instructions

  • In a large skillet, add shrimp, garlic, lemon juice and water. Saute 5 minutes or until shrimp turns pink.
  • Add spinach, salt and pepper. Cook uncovered until spinach wilts.

1 serving = 4 oz protein, 2 cups vegetable
