Lemon Shrimp and SpinachPrint Recipe
- 4 oz shrimp peeled and deveined
- 2 cloves garlic minced
- juice of 1 lemon
- 3 Tbsp water
- 4 cups spinach
- salt and pepper to taste
- In a large skillet, add shrimp, garlic, lemon juice and water. Saute 5 minutes or until shrimp turns pink.
- Add spinach, salt and pepper. Cook uncovered until spinach wilts.
1 serving = 4 oz protein, 2 cups vegetable
