Grilled Steak and Tomatoes

Ingredients
Tomatoes
- 2 small tomatoes halved and cored
- olive oil cooking spray
- salt and pepper to taste
Steak
- 4 oz filet
- 1 tsp rosemary
- 1 tsp basil
- 1 tsp parsley
- salt and pepper to taste
Spinach
- 1/4 cup beef broth no added sugar or oil
- 2 tsp balsamic vinegar
- 1 tsp minced shallot
- 1 clove garlic sliced
- 4 cups baby spinach
- salt and pepper to taste
Instructions
- Preheat grill.
- Lightly spray the tomato halves with cooking spray, season with salt and pepper. Grill for 8 minutes per side.
- Rub the filet with spices, salt and pepper. Grill 4-7 minutes per side, until you reach desired doneness.
- In a large skillet, add beef broth, balsamic vinegar, shallot, garlic and spinach. Season with salt and pepper and cook until spinach is wilted.
- Put the spinach mixture on plate and top with grilled steak and tomato.
