Garlic Chicken Stir Fry

  • 1 lb chicken breast cut into cubes
  • Tablespoons chicken broth
  • 1 yellow bell pepper
  • 1 cup sliced mushrooms
  • 2-3 cup broccoli florets
  • 4 cloves garlic
  • Salt and pepper to taste
  • 1 Tbsp Coconut Aminos
  • ¾ cup chicken broth
  • 1 ½ tsp monk fruit sweetener
  • 2 tsp arrowroot


  • Heat the chicken broth in a skillet over medium heat.
  • Add the broccoli, mushrooms and yellow peppers.
  • Cook for 5-6 minutes until vegetables are tender.
  • Remove the vegetables, cover and set aside for later use.
  • Place a small amount of broth then add the chicken breast. Cook until the chicken is no longer pink. Add some salt and pepper to taste. Mix veggies back into the skillet.
  • In a separate bowl, combine the coconut aminos, monk fruit, and chicken broth. Mix well. Pour the sauce over the vegetables and chicken. Cook for 2-3 minutes until everything is coated well and thickened.
  • Serve over riced cauliflower.
