Crustless Pumpkin Pie (Phase II)

Ingredients
 

  • coconut oil cooking spray
  • 1 15 oz can pumpkin puree no added sugar
  • 2 eggs
  • 1/2 tsp SweetLeaf Stevia Clear
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp nutmet

Instructions

  • Preheat oven to 350°F.
  • Spritz an aluminum or glass pie dish with cooking spray (or 6 muffin tins).
  • Whisk together pumpkin, eggs, stevia and spices and pour into baking dish.
  • Bake 45 minutes or until firm.
