Cranberry Cheesecake Bars

Ingredients
 

Filling

  • 2 1/3 cup lowfat cottage cheese
  • 1 cup greek yogurt
  • 2 large eggs
  • 1 Tbsp stevia powder
  • 1 Tbsp ground flaxseed
  • 1 Tbsp arrowroot flour
  • ½ Tbsp vanilla extract

Cranberry Compote

  • 1 lb fresh cranberries
  • 1/2 Tablespoon of lemon juice
  • 3 tablespoons of water
  • 1 teaspoon stevia
  • Cooked down over medium heat for 20 minutes cool down before serving

Instructions

  • Preheat oven to 350 degrees Fahrenheit

Filling

  • In a blender, blend all ingredients except eggs until smooth
  • In a small bowl, beat 2 eggs together
  • Gently mix eggs in until just combined
  • add filling into an 8X8 baking dish lined with parchment paper
  • Bake for 60 minutes or until set
  • Let cool on the counter and then for 60 minutes or longer (the longer the better)
  • Add cooled cranberry compote
