Cranberry Apple Bars

Ingredients
 

  • 1/2 cup golden flaxseed
  • 1/4 cup arrowroot flour
  • 2 teaspoon stevia or to taste
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • pinch of ground nutmeg
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/4 cup apple sauce
  • 1 teaspoon vanilla extract
  • 1 apple peeled and diced into small cubes
  • 1 cup fresh cranberries (can also use blueberries) optional soak in 100% Apple juice for 60 minutes then drain before adding into mix

Instructions

  • Mix Cake ingredients together and fold in chopped apples & cranberries . Let sit for a few minutes to let the flax seed expand.
  • Bake In a loaf pan at 350 for 45 minutes . Cool at room temperature for 30 minutes. Then put in the refrigerator for about an hour so it will slice better.

Notes

cut into 8 pieces = 1 serving of Flaxseed and 1/4 serving of fruit and 1/4 oz of protein
