Cinnamon Apple Stuffed French Toast

Ingredients
 

Panfakes Bread

  • 4 eggs
  • 4 Tbsp greek yogurt
  • ½ tsp pure vanilla extract
  • 4 Tbsp golden flaxseed ground
  • 1 tsp baking powder
  • 1 tsp Stevia powder
  • 1 tsp cinnamon or apple pie spice
  • 2 pinch salt

Egg Mix

  • 2 eggs
  • 2 Tbsp choice of milk
  • 1 tsp cinnamon
  • 1 tsp stevia

Instructions

  • In a medium bowl, whisk together eggs, yogurt, vanilla, flaxseed, baking powder, stevia, cinnamon and salt. Let sit about 2 minutes to allow batter to thicken.
  • Bake in a loaf pan for 30 minutes at 350
  • Let cool and cut the loaf in half then turn on its side and cut down the middle again to get 4 slices.

To make the French Toast:

  • Whisk the eggs, milk, cinnamon and Stevia in a bowl. Set aside.
  • Heat a large pan or skillet over medium heat. Once it's hot, spray it with non-stick cooking spray. Then one at a time, dip your bread slices into your batter and place them in the pan. Cook for 2-3 minutes on one side, flip them and cook for 2-3 more minutes on the other side (or until golden brown).
  • Serve with baked cinnamon apples or fruit of choice and greek yogurt
