Ingredients
Chicken
- 1 lb chicken breasts, cubed
- 1/2 cup Greek yogurt
- juice of 1 lemon
- 4 cloves garlic, minced
- 2 tsp Celtic Sea Salt
- 2 tsp cumin
- 2 tsp garam masala
- 2 tsp paprika
Sauce
- 1/4 cup chicken broth
- 1 onion, minced
- 2 Tbsp ginger, minced
- 4 cloves garlic, mined
- 2 tsp turmeric
- 2 tsp coriander
- 2 tsp paprika
- 2 tsp chili powder
- 2 tsp garam masala
- 1 Tbsp tomato paste
- 1 29 oz can tomato sauce
- 1 cup water
- 1/2 cup cottage cheese, pureed
- 4 cups cauliflower rice, cooked
- fresh cilantro, for garnish
Instructions
Chicken
- In a large bowl, mix together all chicken ingredients and marinate 1 hour or overnight.
- Preheat oven to 425°F.
- Line a 9x13 baking dish with parchment paper or aluminum foil.
- Place marinated chicken on skewers, set them over baking dish and bake 25 minutes, or until cooked through and browned.
Sauce
- In a large pot, add broth, onion, ginger and garlic. Cook until onions are translucent.
- Add spices and mix thoroughly.
- Stir in tomato paste, tomato sauce and water and bring to a boil.
- Mix in pureed cottage cheese, then add chicken.
- Serve over cauliflower rice and sprinkle with fresh cilantro.
