Ingredients
 

Chicken

  • 1 lb chicken breasts, cubed
  • 1/2 cup Greek yogurt
  • juice of 1 lemon
  • 4 cloves garlic, minced
  • 2 tsp Celtic Sea Salt
  • 2 tsp cumin
  • 2 tsp garam masala
  • 2 tsp paprika

Sauce

  • 1/4 cup chicken broth
  • 1 onion, minced
  • 2 Tbsp ginger, minced
  • 4 cloves garlic, mined
  • 2 tsp turmeric
  • 2 tsp coriander
  • 2 tsp paprika
  • 2 tsp chili powder
  • 2 tsp garam masala
  • 1 Tbsp tomato paste
  • 1 29 oz can tomato sauce
  • 1 cup water
  • 1/2 cup cottage cheese, pureed
  • 4 cups cauliflower rice, cooked
  • fresh cilantro, for garnish

Instructions

Chicken

  • In a large bowl, mix together all chicken ingredients and marinate 1 hour or overnight.
  • Preheat oven to 425°F.
  • Line a 9x13 baking dish with parchment paper or aluminum foil.
  • Place marinated chicken on skewers, set them over baking dish and bake 25 minutes, or until cooked through and browned.

Sauce

  • In a large pot, add broth, onion, ginger and garlic. Cook until onions are translucent.
  • Add spices and mix thoroughly.
  • Stir in tomato paste, tomato sauce and water and bring to a boil.
  • Mix in pureed cottage cheese, then add chicken.
  • Serve over cauliflower rice and sprinkle with fresh cilantro.
