Chicken Spinach Mushroom Oven Bake

Ingredients
 

  • 2 lbs Thin Sliced Chicken Breast
  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 8 oz shredded sheep cheese
  • 2 cup drained cottage cheese
  • ½ cup chicken broth
  • 1 package sliced mushrooms
  • 1 teaspoon onion powder x2 (1/2 for cauliflower mixture, 1/2 for sauce)
  • 1 teaspoon garlic powder x2 (1/2 for cauliflower mixture, 1/2 for sauce)
  • 1 teaspoon basil x2 (1/2 for cauliflower mixture, 1/2 for sauce)
  • 1 teaspoon parsley x2 (1/2 for cauliflower mixture, 1/2 for sauce)
  • 1 bag riced cauliflower
  • 1 chopped pepper
  • ½ chopped onion

Instructions

  • Preheat oven to 350 degrees. Prepare cauliflower in microwave for 6 minutes. Add the chopped pepper and onion along with the Onion and garlic powder, basil and parsley. Spray 9x13 pan and pour the mixture into the pan. Next place the thin sliced chicken breast on top of the cauliflower blend. Add a layer of spinach and chopped mushrooms.
    Sauce - in a small blender add the 2 cups of drained cottage cheese. Blend until creamy. Add the chicken broth and the seasonings garlic and onion powder, basil and parsley. Mix altogether then pour over everything in the 9x13 pan. Lightly cover with foil and bake for 40 minutes. Then add the grated sheep cheese and Italian season blend bake for another 10 minutes until lightly browned.
