Chicken & Shrimp Ramen Bowl

Ingredients
 

  • 1 Tbsp oil
  • 2 oz chicken
  • 2 oz shrimp
  • 2 cups chicken broth
  • 1/4 cup coconut aminos
  • palmini noodles can also use zucchini noodles
  • ½ tsp ginger
  • ½ tsp garlic
  • ½ tsp onion powder
  • 1 tsp minced garlic
  • Salt to taste
  • pepper to taste

Veggies

  • mushrooms
  • Bok choy
  • ¼ cup diced Onion
  • 1 tsp minced garlic

Garnish

  • sliced radishes
  • green onion
  • hard-boiled egg
  • ½ Tbsp sesame seeds

Instructions

  • Heat a skillet over medium heat and add oil. cook shrimp & chicken seasoned with ginger, garlic, onion powder, salt and pepper. Set aside.
  • Sauté mushrooms, onion, minced garlic & bok choy
  • Boil the Palmini noodles in chicken broth and coconut aminos until soft
  • Add Palmini noodles and broth to a bowl and top with chicken, shrimp and veggies
  • Garnish with hard-boiled egg, green onion, sesame seeds & sliced radishes
