Chicken Parmesan

Ingredients
 

  • 8 oz chicken breast
  • 1 egg beaten
  • 1 cup marinara sauce
  • 1/2 cup cottage cheese blended
  • fresh basil sliced for garnish

Coating

  • 32 crackers finely crushed
  • ¼ cup arrowroot flour
  • 1 Tbsp Italian seasoning
  • 1/2 tsp Celtic sea salt
  • 1/4 tsp black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • dash red pepper flakes optional

Instructions

  • Preheat oven to 350°F.
  • Mix together dry ingredients.
  • Dip chicken in egg and coat with cracker crumb mixture.
  • Place coated chicken breasts on a baking sheet lined with foil.
  • Bake 20 minutes, flipping halfway through.
  • Spoon marinara sauce over the top of the chicken breast, then spoon blended cottage cheese. Bake another 10 minutes.
  • Garnish with fresh basil.
