Ingredients
 

  • 2 Tbsp cottage cheese
  • 2 Tbsp Greek yogurt
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 tsp lemon juice
  • 2 tsp flax seed, ground
  • 1 Tbsp xylitol
  • coconut oil cooking spray

Instructions

  • Preheat oven to 350°F.
  • In a blender or food processor, combine all ingredients and blend until smooth.
  • Spritz a small baking dish with cooking spray.
  • Pour cheesecake mixture into baking dish and bake 30 minutes, or until toothpick comes out clean.
  • Serve chilled.
