Breakfast Tofu Scramble

Ingredients
 

  • 8 oz firm tofu
  • 1/4 cup onion diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 4 cups baby spinach
  • 2 Tbsp nutritional yeast
  • 1 tsp Celtic sea salt
  • 1/2 tsp black pepper
  • olive or coconut oil cooking spray

Instructions

  • Spritz a skillet with cooking spray and add tofu, onion and bell peppers.
  • When onions are translucent, add spinach and cook until wilted.
  • Add nutritional yeast, salt and pepper and stir to combine.

Notes

1 serving = 4 oz protein, 1 cup vegetable
