Baked Zucchini Fritters

Ingredients
 

  • 5 cups of shredded zucchini - squeezed dry
  • 1 cup of shredded Manchego cheese
  • 48 Almond Nut Thin Crackers - finely ground
  • 1 egg
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • ¾ tsp Celtic Sea Salt
  • ¼ tsp black pepper
  • 1 TBSP Nutritional yeast optional
  • 1 TBSP Dried minced onion optional

Instructions

  • Preheat oven to 400 degrees and line baking sheet with parchment paper
  • Add all ingredients to a bowl and mix well. Mixture should stick together but not too sticky or wet
  • Using a small scoop and shape into a flat patty - should make 12-14
  • Bake at 23 minutes or until golden brown, then flip and bake 2-3 more minutes
  • Remove from baking sheet
  • Top with Greek yogurt - optional
