Arugula Salad with Chicken and Fruit

Ingredients
- 4 oz chicken breast
- 2 cups arugula
- 1 apple diced
- 1 Tbsp red onion diced
- 2 Tbsp salad dressing See links in recipe notes
- salt and pepper to taste
Instructions
- Lightly salt and pepper chicken and cook in a skillet on medium high heat until slightly browned.
- Remove chicken from heat and set aside.
- Wash and dry arugula.
- Lay chicken, apple and onion over arugula and spoon over dressing.
Notes
1 serving = 2 cups vegetable, 4 oz protein, 1 fruit
Salad dressings options: Apple Cider Vinaigrette, Ranch Dressing, Italian Vinaigrette
Try replacing apple with 1/2 cup sliced strawberries, 1/2 segmented grapefruit or tangerine slices.
