Shrimp Sushi
  • 1 cauliflower head
  • ½ c apple cider vinegar
  • 1 tsp Stevia
  • 1 cucumber, peeled, seeded, and chopped
  • 8 asparagus spears, cooked and chopped
  • Bag of medium, cooked shrimp (deveined and no tails), chopped
  • Nori seaweed sheets
  1. Sushi Rice: Cut cauliflower head into small pieces. Put in food processor and
  2. pulse until it turns into "rice" size pieces. Put ½
  3. cup of apple cider vinegar in saucepan with 1 tsp of Stevia. Bring
  4. just to a boil. Add "rice" to pan. Stir and cook over
  5. medium heat for about 10 minutes.
  6. Assembly:
  7. Place a Nori seaweed sheet down on sushi mat. Put some of the rice
  8. across the bottom of the sheet leaving a ¼ inch space along the
  9. edges. Lay the chopped cucumber, asparagus and shrimp in the middle
  10. of the rice in a line, end to end. Carefully start rolling the sheet
  11. over keeping the rice, vegetables and shrimp in place. Wet the end of
  12. the sheet and seal. Carefully cut the roll into pieces.
