• 2 cans diced tomatoes
  • 1 small onion - red or Vidalia, cut into chunks
  • 1 large fresh jalapeno pepper
  • 1 lime
  • 1 small orange or clementine
  • 1 good size handful cilantro leaves
  • Garlic, fresh or powder, to taste (I use about a half teaspoon powder)
  • Cajun seasoning (use salt free and sugar free, about another half teaspoon)
  • Celtic sea salt to taste
  1. Add to blender pitcher: onion, jalapeno, tomatoes, juice from lime, juice from lemon, cilantro, garlic, Cajun seasoning and Celtic salt.
  2. Puree until desired texture.
Makes about 3 cups.
