Pumpkin Cauliflower Cookies

Pumpkin Cauliflower Cookies
  • 1 head of cauliflower
  • 1 egg
  • 3 TB unsweetened applesauce
  • 1 cup cottage cheese (small curd)
  • 1 tsp stevia sweet drops
  • 1 tsp pumpkin sweet drops
  • 1 tsp vanilla creme sweet drops
  • 2 TB flaxseed meal
  • ½ tsp xanthan gum
  • ½ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ½ tsp salt
  • pinch of baking soda
  1. Pre-heat oven to 400’
  2. Rice cauliflower with ½ cup of water in blender.
  3. Place in microwave safe bowl. Microwave on
  4. high for 4 minutes.
  5. Drain into a mesh colander and let all water drip out.
  6. Place cauliflower in a bowl, add egg, applesauce, cottage cheese and sweet drops.
  7. Mix well. In a separate bowl, mix all dry ingredients. Add dry ingredients to wet and mix well.
  8. Refrigerate for 30 minutes.
  9. Spray cookie sheet with coconut oil.
  10. Drop large heaping tablespoons on cookie sheet.
  11. Bake for 45 minutes.
  12. Let cool completely.
Makes 12 cookies
