Recipe type: Phase 1 FasTrac
  • 2 Eggs
  • 1 oz. Greek yogurt (½ oz. for the batter & ½ oz. for garnish)
  • 2 tsp. flax seed-ground
  • ½ -1 tsp. xylitol
  • Apple Pie Spice to taste – may substitute with pumpkin pie spice
  1. In a medium bowl add all ingredients and beat with a fork.
  2. Pour a half dollar sized amount into a fairly hot skillet.
  3. Will bubble up pretty quickly, turn over, wait a few seconds, remove and place on plate.
  4. Dab relish on each panfake. (see other recipe)
  5. Slice remaining strawberries (from relish) and fan them out around the plate and dab ½ oz. of yogurt in the center.
Dr. Glenn Smith (a SHAPE practitioner) tried this recipe and made some modifications for a more fluffy panfake. Just add a tsp. of baking soda and a pinch of salt.
