Mexican Tortilla Meatball Soup

  • Ingredients for meatballs:
  • 1.5 pounds lean ground beef
  • 3 tablespoons chopped cilantro
  • 1 tablespoon minced garlic
  • 2 teaspoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon hot sauce ((optional))
  • salt & pepper to taste
  • 1-2 tablespoons oil to cook them in
  • Ingredients for soup:
  • 2 medium onions, chopped (about 2 cups)
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 (15 oz) cans Italian-style stewed tomatoes, chopped, saving juice
  • 8 cups chicken stock
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon hot sauce (or to taste) ((optional))
  • salt & pepper to taste
  1. Meatballs:
  2. In a large soup pot, combine the ground beef w/the cilantro, garlic, lime juice, cumin, hot sauce, salt & pepper. Form into 1 oz balls. Heat oil in skillet over moderate heat. Cook 'til brown on all sides. Set aside in a bowl.
  3. In the same large soup pot, heat 2 tablespoons of oil. Add onions & garlic & cook 'til translucent. Add tomatoes and their juice, chicken stock, chili powder, cumin & hot sauce. Simmer for 15-20 minutes. Add meatballs. Serve soup w/garnishes.
