Mexican Chicken Soup
  • 1 clove minced garlic
  • 1 cup diced tomatoes
  • 4 cups chicken broth
  • 2 tsp onion powder
  • 4 tsp cumin
  • 2 tsp chili powder
  • 1 lb cooked and shredded chicken
  • ¼ cup cilantro
  1. On high heat combine cook garlic 3-5 minutes. Add broth to keep garlic from sticking.
  2. Add tomatoes, chicken broth, onion powder, cumin, chili powder. Bring to a boil. Reduce heat and simmer for 20 minutes. Stir in cilantro and simmer for 5 more minutes.
