Meatloaf with “Mashed Potatoes”

  • 2 lbs lean ground beef
  • ½ onion diced
  • 1 egg
  • 2 TBSP mustard
  • ½ c Marinara/Spaghetti Sauce (any brand with no sugar or oil)
  • 2 TBSP garlic minced
  • 1 cup applesauce - unsweetened
  • ½ t salt
  • 1 t pepper
  • 1 head of cauliflower
  • 1 TBSP of diced onion
  • 2 tsp of minced garlic
  • ½ tsp salt
  • ½ tsp pepper
  • chicken stock
  • 1 TBSP cottage cheese
  2. Preheat oven to 350 degrees.
  3. Except for the meat, put the other ingredients for the meatloaf in large glass bowl and mix well.
  4. Add the meat and mush it all together.
  5. Spritz a loaf pan with coconut oil, put the meatloaf in the dish.
  6. Cook for 30-40 minutes and then drain off any grease in the pan, return to oven for another 10 minutes if desired
  8. Head of cauliflower broken up into small pieces (or bag of frozen cauliflower)
  9. Add 1 TBSP of diced onion, 2 tsp of minced garlic, ½ tsp salt, ½ tsp pepper and add chicken stock to just cover the cauliflower.
  10. Stir it up and put a lid on it, simmer until it smushes with the spoon, drain off liquid.
  11. Add 1 TBSP of cottage cheese and put it all in the blender - blend until whipped.
