Meatballs – and Zoodles

Zoodles and Meatballs
 
Recipe type: Phase 1 FasTrac
Ingredients
  • Half a spiralized zucchini
  • 4 cups sauce
  • 2 cups fresh spinach
  • Spices to taste
  • 1 lb extra lean beef
  • 20 nut thins ground in the vitamix
  • 2 eggs
  • 2 tsp fresh garlic
  • 1 tsp nutritional yeast
Instructions
  1. Prepare meat and spice/nut thin mix/eggs and form into meat balls.
  2. Bake meat balls until cooked.
  3. Spiralize the zucchini.
  4. Put sauce in a pan and bring to a simmer and add zucchini.
  5. Cut up a few meatballs and add to the pan.
  6. Cook for about 5 minutes then add spinach and cook for an additional 1-2 minutes.
