Mashed Cauliflower

Mashed Cauliflower
Serves: 6
  • 1 large head of cauliflower
  • ¾ cup low-fat cottage cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground black pepper
  • ½ tsp Celtic Sea Salt
  1. Prepare the cauliflower by rinsing and separating cauliflower and cutting into florets.
  2. Steam the cauliflower for 10 minutes until soft and tender. (I use my electric Pressure Cooker, High pressure for 4 minutes with ½ cup of water.)
  3. Remove cauliflower from steamer or Pressure cooker and place in a colander and drain well.
  4. Pour cauliflower into large mixing bowl and beat it till it is as smooth as you can get it. Use an emersion blender or food processor.(I use an Immersion Blender or my Big Ninja blender)
  5. Add remaining ingredients.
  6. Mix well again with Immersion Blender or food processor until mixed and desired texture/consistency is achieved.
