Lemon Shrimp and Spinach
Serves: 1
  • 6 oz shrimp (peeled & deveined)
  • spinach – generous amount
  • 3T water
  • juice of 1 lemon (or ½ lemon if you like things less lemony)
  • 4-5 cloves minced garlic
  • salt and pepper to taste
  1. Preheat non-stick skillet over medium heat. Add 3T water, garlic, and shrimp.
  2. Cook 5 mins or until shrimp just turns pink.
  3. (Add water as necessary) Squeeze in juice of 1 lemon.
  4. Add spinach.
  5. Toss in salt & pepper.
  6. Cook uncovered until spinach wilts.
(1 protein, 1 vegetable)
