Ground Beef and Cabbage
 
Recipe type: Phase 1 FasTrac
Ingredients
  • 2 lb ground beef very lean
  • 1 cup onion (1 small) diced
  • 4 cloves produce garlic minced
  • 1 pkg coleslaw mix or small head cabbage
  • 1 cup chicken broth
  • ½ tsp fennel seeds
  • ¼ tsp red pepper
  • 1 tsp pepper
  • 1 tsp salt
  • ½ cup Parmesan cheese shredded (omit for Phase I - or replace with Nutritional Yeast)
  • 1 Tbsp Worcestershire sauce
  • ½ cup Parmesan cheese shredded (omit for Phase 1 - or replace with Nutritional Yeast)
Instructions
  1. Combine ground meat, onion and garlic in a 2 quart covered oven casserole/pan with.
  2. Sauté uncovered for about 15 minutes, stirring occasionally to break up meat mixture.
  3. Add chicken broth, fennel seeds, red pepper, pepper, salt, ½ cup Parmesan cheese, and Worcestershire sauce and mix well.
  4. Add cabbage and mix well.
  5. Sprinkle remaining ½ cup Parmesan cheese over top.
  6. Cover casserole and bake at 350 for 1 hour.
Notes
NOTE: This can be done in a skillet and then moved to a covered casserole before putting in oven.
