Recipe type: Phase 2
  • 2 lbs very lean ground beef (1.8 oz protein per serving)
  • 1-1/2 cups onion (1 large), chopped
  • 1 large green bell pepper, chopped
  • 2 cloves garlic, chopped
  • 1 10-oz can Ro-Tel tomatoes, original
  • 1 15-oz can diced tomatoes
  • 1 25-oz jar spaghetti sauce tomato basil or spicy
  • 8 oz canned mushrooms, drained
  • 2 15-oz cans green beans, drained
  • 1 tsp salt
  • 1 tsp pepper
  • 6 slices American cheese (4.8 oz) (0.3 oz cheese per serving)
  1. Sauté beef, onion, bell pepper, and garlic until meat is browned.
  2. Add Ro-Tel tomatoes, diced tomatoes, spaghetti sauce, mushrooms, and green beans.
  3. Simmer 15 minutes.
  4. Put cheese slices over top, put lid on and let melt for 5 minutes.
  5. Stir cheese into mixture and serve.
Freezes well! Serving size 1 cup.
