Fruit Compote

Fruit Compote
  • 1 c. strawberries
  • 1 c. blueberries
  • 1 c. blackberries
  • 2 clementines
  • 6 peeled & sliced apples (gala, fuji, and honey crisp are the best. The sweeter the apple the better.)
  • ¼ c. water IF you used frozen fruit, OMIT the water.
  • ¼ cup of xylitol (start with less than ¼ c and add to taste)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract
  • 2 tbsp arrowroot powder for thickening
  1. Preheat oven to 350.
  2. Mix berries and apples together in a 9x13 pan. Sprinkle with xylitol, cinnamon, and nutmeg and add the water.
  3. Bake for 1 hour or until apples are very tender.
  4. Mix the arrowroot with a couple tbs of cold water.
  5. Remove the fruit from the oven and stir in the arrowroot powder mixture and vanilla.
  6. Squeeze the juice from one clementine over the fruit and cop up the rest and mix it throughout the dish.
  7. Bake for 10 more minutes.
  8. Serve by itself or with yogurt, either plain or sweetened with a couple stevia drops.
*Feel free to switch up the fruit. Use more apples if you want it to be more like apple pie, more blueberries, etc. Play around with spices. This could also be served on top of flax & chia seed squares & topped with meringue for a holiday treat.
