Flax & Chia Seed Mini Muffins
  • 1 c. fresh ground flaxseed meal
  • ½ tsp whole chia seeds
  • ¼ tsp salt
  • 2 tsp xylitol
  • 1 tsp baking powder
  • ¼ c. plain greek yogurt
  • 2 tbsp apple sauce
  • 2 eggs
  • 1-2 tsp. vanilla extract to taste
  • ½ c. fresh fruit such as blueberries (optional)
  1. Mix all ingredients together and let the batter rest until it thickens.
  2. Scoop into mini muffin pans or in a 9x13 pan. Bake at 350 for 10-15 minutes.
Large muffins will not cook well because the batter is too dense.
