English Muffins
 
Serves: 4
Ingredients
  • ½ cup golden flax meal
  • ½ arrow root
  • 1 T and 1 t baking powder
  • 1 tsp salt
  • ¼ c coconut milk
  • ¼ c yogurt
  • 4 egg
  • Spices (depending on purpose - see below)
Instructions
  1. Combine wet ingredients and add combined dry ingredients. Microwave in cup (you can use the Pyrex to get English muffin shape-then slice it sideways and toast for tuna salad or egg salad or a sandwich) for 3 minutes. You can also bake in oven in cupcake tin for 10-15 minutes at 350F.
  2. Spices: if making English muffins add some minced onion and garlic. If making a sweeter muffin add 1 T vanilla and ¾ cup xylitol. You can also add (one cup per muffin) shredded zucchini to make zucchini muffins.
