Ingredients
  • ½ cup golden flax meal
  • ¼ tsp arrow root
  • 1 T and 1 t baking powder
  • 1 tsp salt
  • ¼ c coconut milk
  • ¼ c yogurt
  • 4 egg
  • Spices (depending on purpose - see Notes)
Instructions
  1. Combine wet ingredients and add combined dry ingredients.
  2. Microwave in cup (I use the Pyrex to get English muffin shape-then I slice it sideways and toast for tuna salad or egg salad or a sandwich) for 3 minutes. You can also bake in oven in cupcake tin.
Serving size: 4
Notes
Spices: if making English muffins - I add some minced onion and garlic. If making a sweeter muffin - I add 1 T vanilla and ¾ cup xylitol. I have also added (one cup per muffin) shredded zucchini to make zucchini muffins. **Can add 2 T. Almond Meal to add texture, protein and a nutty almond taste.
