Crustless Mushroom Quiche
  • 4-5 eggs
  • 1 cup low-fat cottage cheese
  • 1 cup mashed cauliflower
  • ½ cup sautéed mushrooms
  • garlic
  1. Preheat oven 350° Sauté mushrooms with garlic.
  2. Mash crumbled cauliflower with low-fat, plain Greek yogurt.
  3. Mashed cauliflower as base of quiche. Spread cottage cheese on top of the cauliflower.
  4. Whisk together eggs and sautéed mushrooms.
  5. Pour on top of cottage cheese.
  6. Bake in the oven 30-40 minutes.
  7. Outside edges should be golden brown and eggs set.
