Country Homemade Vegetable Beef Soup
  • 115 g lean beef cubed
  • Celery, cabbage, or tomato diced
  • 2 cups low sodium beef or vegetable broth (or sub 1 cup water for 1 cup of broth)
  • 1 Tbsp onion chopped
  • 1 clove garlic crushed & minced
  • 1 bay leaf
  • ⅛ tsp dried basil
  • ⅛ tsp fresh or dried oregano
  • pinch of thyme
  • pinch of paprika
  • pinch of chili powder
  • salt & pepper (just a dash)
  1. Combine onion, garlic, and spices with beef broth. Add celery and diced beef. Simmer for 20-30 minutes. Add tomatoes and simmer for an additional 5 minutes.
