Ingredients
  • 1 lb spinach ( I pinch off the larger stems)
  • 1 pint strawberry, sliced set a few aside ( egg slicer works wonders)
  • 4 – 2 oz Salmon Filets or Chicken Breast
  • For The DRESSING
  • ⅓ cup raspberry red wine vinegar
  • ½ cup sugar or ½ cup sugar substitute
  • 1 teaspoon dry mustard
  • ¾ cup vegetable oil
  • 2 teaspoons poppy seeds
Instructions
  1. Grill Chicken or Pan Sear Salmon, set aside to cool.
  2. Combine dressing ingredients in Ninja/blender.
  3. Toss and garnish with a few sliced strawberries.
  4. Serve immediately.
