Cinnamon Baked Chicken
  • ¼ tsp ground cinnamon
  • ⅛ tsp curry powder
  • Pinch of nutmeg
  • Pinch of cardamom
  • Pinch of garlic powder
  • Salt and pepper, to taste
  • Stevia powder, to taste
  • 4 Melba toast or 6 gluten-free crackers, crushed
  • 4-6 oz chicken breast
  • ½ cup chicken broth or water
  1. Preheat oven to 350 degrees.
  2. Mix together dry spices.
  3. Take half the dry spice mixture and add it to the cracker crumbs.
  4. Dip the chicken in the broth and coat with the cracker/spice mixture. Lay in a shallow baking dish.
  5. Add the broth and remaining spices and top the chicken with the rest of the cracker/spice mixture.
  6. Bake for 20 minutes or until chicken is fully cooked.
