Cilantro Lime Cauliflower Rice and Grilled Chicken Breast

Ingredients
  • For the Grilled Chicken Breast marinated in Fresh Squeezed Orange Juice with Mexican Seasonings:
  • Orange Juice Marinade
  • 1 med orange, Naval Orange
  • 2 tbsp, Premium, Organic Mct Oil
  • 3 teaspoon, Mexican Fiesta Salt-Free Blend
  • 1 tsp, Ground Cumin
  • 1 tablespoon, Vinegar
  • For the Cilantro Lime Cauliflower Rice:
  • 1 -2 pkgs of premade Cauliflower Rice (I used Trader Joes)
  • 2 cloves, Garlic, raw chopped
  • 1 bunch of green onions chopped
  • 1 lime juiced
  • 1 c chopped cilantro
  • 1 can Trader Joe's Hatch Green Chiles
Instructions
  1. For the Grilled Chicken Breast part, take the following:1 med Navel orange, 2 tbsp Premium Organic Mct Oil, 3 teaspoon Mexican Fiesta Salt-Free Blend, 1 tsp Ground Cumin, 1 tablespoon Vinegar.
  2. Mix well and marinate chicken breasts for about 1 to 1½ hours.
  3. Then grill chicken on BBQ
  4. Take the remaining ingredients for the Cilantro Lime Cauliflower Rice part, Spray frying pan with Coconut Oil, stir fry the white parts of the green onions and garlic for a couple of minutes until they are soft.
  5. Add the cauliflower rice and stir the mix together. Put a cover on the frying pan and let the cauliflower mixture cook for 5-7 minutes.
  6. Stir frequently to cook evenly.
  7. When done cooking, add lime juice, salt to taste.
  8. Stir in chopped Cilantro and green part of green onions. I also sprinkled a half package of Stevia to cut down on the acidity.
