Chipotle Shrimp, Cabbage Slaw with Lime Crema Sauce
  • For the Cilantro Lime Crema
  • ½ cup nonfat Greek yogurt
  • 3 tablespoons finely chopped cilantro
  • juice from 1 lime
  • For the Cabbage Slaw
  • 1½ cups shredded red cabbage
  • ½ cup cilantro, loosely packed
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon sweetleaf stevia
  • juice from 1 lime
  • ¼ cup pico
  • For the Fish
  • 1 pound shrimp
  • 1 tablespoon chipotle seasoning
  1. For the Cilantro Lime Crema
  2. Mix all ingredients in a small bowl until smooth. Spoon the mixture into a plastic baggy and cut a ¼ inch from the corner to make a piping bag. Set aside.
  3. For the Cabbage Slaw
  4. Mix all ingredients together in a medium bowl and set aside.
  5. For the Fish
  6. Season the shrimp and cook by using your preferred method
  7. To assemble
  8. Place cabbage slaw in a bowl, top with shrimp and drizzle with Cilantro Lime Crema
