Chicken Piccata
  • 2 boneless, skinless chicken breasts pounded flat and cut into 4-6 pieces
  • 2 cups arrowroot powder
  • 3 Tbs. or more of nutritional yeast
  • 1 tbs of ground flaxseed meal
  • Italian seasoning
  • 1 egg
  • spritz of Olive oil
  • ½-3/4 cup Lemon juice
  • ½-3/4 cup Chicken broth
  • 2 Tbs or so arrowroot powder for thickening sauce
  • salt and pepper to taste
  • 1 clove minced garlic
  • greens (the organic spring mix)
  1. Heat oven to 400.
  2. Mix arrowroot powder, nutritional yeast, Italian seasoning, and flaxseed meal in a bowl.
  3. Beat egg with a little bit of water in another bowl.
  4. Dip chicken in egg then into “flour” mixture.
  5. Spray skillet with nonstick spray.
  6. Heat some olive oil in a skillet and brown the chicken on all sides.
  7. Make sure chicken is cooked pretty well before turning over so you get a nice coating.
  8. Place chicken on cookie sheet and bake for 10 minutes in oven just to make sure it’s done and crisped.
  9. While chicken is in oven, use same pan and add lemon juice, garlic, chicken broth, and salt.
  10. Mix a couple tablespoons of arrowroot powder with a couple Tablespoons of water and add to sauce to thicken.
  11. Place greens on a plate, place chicken on the greens, top with the sauce, & enjoy!!
