Ingredients
  • 2 Cups cooked Cauliflower rice
  • 1 lb grass fed Ground Beef or Shredded Chicken
  • 1 12 ounce jar salsa
  • ½ cup to 1 Cup diced veggies such as bell peppers, mushrooms, onions (whatever you’d add to tacos)
  • 2 tbsp taco seasoning (Shape approved)
  • 1 Cup Fage Total 0 Yogurt
  • 2 Cups Daisy Cottage cheese + ½ Cup
Instructions
  1. Cook Beef or Chicken in skillet.
  2. Cook Cauliflower.
  3. After cooking the cauliflower, combine all the other ingredients with the rice in a large bowl and stir until combined.
  4. Pour mixture into a foil-lined 9 x 13 pan.
  5. Sprinkle remaining ½ cup cottage cheese on top.
  6. Bake at 375 for approximately 35-40 minutes, or until cheese and the top is beginning to brown.
  7. Allow casserole to rest and cool for about 10 minutes to make slicing easier.
  8. Yields: 12 hearty squares of casserole from the 9 x 13 pan. Store leftovers in fridge or freeze squares in individual sized containers in the freezer
