Cauliflower/Broccoli Tortillas
 
Ingredients
  • Half head of broccoli
  • ¾ head of cauliflower
  • two eggs
  • salt pepper
  • garlic powder
  • onion powder
Instructions
  1. Food process broccoli and cauliflower until pieces are smaller than a grain of rice
  2. Put in microwave for 2 mins, stir then 2 more mins.
  3. Now the most important part let cool a bit and put into cheese cloth, you have to ring out as much water as possible or it will turn out soggy
  4. Put back into bowl and add two eggs, salt pepper, garlic powder, onion powder, mix well.
  5. Line pan with parchment paper
  6. Start out with a ball about 2 to 3 inches in size, flatten out with your hand until you have about a 6 inch disk.
  7. Bake at 375 for 10 mins, carefully flip and bake again for 7 to 8 more mins.
  8. When ready to serve heat up a pan and do two tortillas at a time, press with spatula to get some char marks, helps to stiffen and gives a nice nutty flavor.
