Cauliflower "Rice"
 
Ingredients
  • 1 head cauliflower
  • Water
Instructions
  1. Cut cauliflower into florets.
  2. Add florets in small batches to food processor and pulse until a rice-like texture is achieved.
  3. Fill a large pot with about an inch of water and bring to a boil.
  4. Add the "rice" and cover. Cook for 4-5 minutes.
  5. Strain the "rice" using a fine mesh strainer, pushing out excess water with the back of a large spoon.
