Broccoli Salad
  • 6 cups broccoli, bite-size pieces
  • ½ small red onion, diced
  • 1 cup mayo (1 egg, 1 TBSP lemon juice, 1-2 tsp yellow mustard, 1 cup plain Greek yogurt, ½ tsp garlic powder, ½ tsp salt, splash of liquid aminos, few drops of stevia, and enough xanthan gum to thicken to your preference--mix in Magic Bullet/blender. This makes approximately 2 cups of mayo)
  • 2 TBSP apple cider vinegar
  • 1 TBSP smoked paprika
  • 2 tsp ground flaxseed
  • salt & pepper to taste
  1. In large bowl, combine broccoli and onion.
  2. In separate bowl, mix mayo, vinegar, ground flaxseed, and smoked paprika. Let sit for 10 minutes.
  3. Pour dressing over broccoli mixture and stir until evenly coated.
  4. Cover and refrigerate until ready to serve.
