Blueberry Muffins

Blueberry Muffins
  • ⅓ Cup ground flax seed
  • 3 eggs
  • ¼ cup melted coconut oil (or MCT oil)
  • ½ to ¾ cup blueberries
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • ½ tsp baking powder
  • ¼ tsp salt
  • 4 TBSP unsweetened applesauce
  • 2 dropper fulls berry or vanilla cream SweetLeaf Stevia
  1. Preheat oven to 350 degrees.
  2. Mix all dry ingredients.
  3. Add in melted coconut oil and stir well.
  4. Add eggs and vanilla and stir.
  5. Add applesauce and mix well.
  6. Lastly add the blueberries.
  7. Spray your pan with coconut oil spray.
  8. Bake 15-18 minutes until golden.
